Basically I'm going to pay a local suspension specialist €1500 to put acquire and fit a drop in fork kit for my 900, new stanchions and a new rear shock.

 

He's offering a replacement Öhlins or a Hyperpro with a remote preload adjuster.

I'm riding in every configuration: solo, two-up, touring. Sporty and chilled.

Which should I go for (and why, if you don't mind explaining)?

Either ought to be good choices

I chose Ohlins. Fully rebuildable and the seller provided a spring suited to my weight at no extra cost. Hyperpro probably the same....

Remote preload adjuster can be added to many shocks, including Ohlins.

How often do you adjust preload ? I set mine up for my weight and rarely change it

The specialist essentially said the same. Ill admit Ive always had a soft spot for Hyperpro but indeed, I cant remember the last time I faffed with a preload adjuster and if he sets it up for me, I doubt Id set it up better later, whichever I choose.

Essentially, preload simply sets ride height, not spring stiffness as I was led to believe when I started riding. Resistance to springiness is a function of the damper settings, not the spring stiffness, at least that's true when the spring has been chosen to match your bodyweight, so in normal operation I don;t find much need to change the preload, except if I take a pile of luggage on a trip with me.

 

Someone posted a thread recently about using a BMW S1000RR rear shock, it just needed some modification to the top clevis to accommodate the small change in length, they're available secondhand at good prices

As far as Im aware my body weight is being factored in to it so hopefully it should all be a good match. Ill let him do the adjustments first and go from there.
